release: take the four AI models out of the release - #236

Conversation
The #89 journey (install, Home, account, System update) needs no model, and the default home profile installs none. Packaging four GGUFs made every release 10.6 GB and pulled them from Hugging Face during the build. Remove the model components, their profile references, upstream recipes and provenance notes. The engine (llama-server) and model-provider stay; models return later as a separate signed publication.

#236 removed the four model components and recipes from the release, so the Mac build no longer fetches model inputs.

Part of #89. Removes the four model components from
components.json(entries and theagent-local-ai/fullprofile references), their upstream recipes and provenance notes, and the one setup test that resolved a model on demand. V3 drops from 10.6 GB to under 1 GB and the build no longer downloads from Hugging Face. The engine and model-provider stay; the defaulthomeprofile is unchanged.
