docs: correct 7.4.0-rc.1 kernel and package versions

Summary

• Correct the lower Linux kernel entry to 6.18.54-Unraid.
• Correct all 42 stale package target versions using the exact RC1 release artifact, including Docker, PHP, Unraid API, and ZFS.
• Explicitly label the cumulative package comparison as 7.3.2 to 7.4.0-rc.1.
• Preserve all 321 package entries, baseline versions, security annotations, and manually edited release prose.

All entries match the full 7.3.2 to RC1 package delta: 319 updated, one downgraded, one added, and none removed.

The previous public release, 7.4.0-beta.3, has 41 updates and one downgrade (libvirt-php) compared with RC1. Those 42 targets were stale here. The report's zero-change comparisons against stable 7.3.3 and internal beta.3.2 do not describe this cumulative list.

Validation

• Passed: pnpm exec remark docs/unraid-os/release-notes/7.4.0.md --quiet --frail.
• Passed: git diff --check.
• Passed: independent full-list comparison against both pinned package snapshots, package-count checks, and cross-check of all 42 corrections against the public-beta report.
• Passed: baseline versions, existing annotations, and all prose before the Linux kernel section are unchanged.
• Full build was not run locally, per the repository's Markdown-only validation guidance. The PR Lint job, including its configured full docs build, passed for 073f03bd67062597bb52f004e294ecd8a4edd1f4. The Cloudflare preview build also passed.
